The secrets to a perfect lobster dinner

Imagine a romantic dinner on a Caribbean beach…the moon reflecting on the calm water, fine sand underfoot, the dim light of a candle on the table…and on the plate? What do you imagine?

Whether or not you’ve already signed up for membership, ETC would like to share the secrets to preparing a perfect lobster with you.

We must first mention that there are several types of lobster, from American lobster and European lobster to spiny lobster. So don’t be surprised if you see a difference when you eat this dish in different parts of the world.

Here’s an Exclusive tip to help you distinguish between different types of lobsters: the spiny lobster HAS NO CLAWS.

You have to take several things into consideration if you want your dish to compete with the chefs who work tirelessly in the Caribbean for ETC members:

  • Fresh lobster must always be purchased alive. The lobster should vigorously beat its tail when you pick it up.
  • Check to see that the lobster has all its limbs ad that there are no holes in its shell. Damaged antennae are completely normal, since they are very fragile.
  • Female lobster are preferred for cooking and can be recognized by softer swimmerets under the tail that help them protect their eggs.

When it’s time to get down to work, first boil a good amount of water in a large pot. Add 70 grams of salt per liter of water.

When the water starts to boil, add the lobster and wait for the water to return to a boil. Then start timing, using this table as a guide:

400 g to 600 g 10 minutes
600 g to 1 kg 14 minutes
1.05 kg to 1.5 kg 18 minutes
1.55 Kg to 1.95 Kg 21 minutes
2 kg and bigger 24 minutes

Once cooked, you can serve the lobster as is or season with a (delicious) spicy sauce. You can also split it in half and grill it with a little butter and basil. Let your imagination carry you away when it comes to seasoning, but keep in mind that lobster meat is delicate and mildly flavored.
