With its rich variety, aromas, and highly nutritious dishes, Peruvian food is considered one of the best cuisines in the world.

Peruvian cuisine is the result of the culinary fusion of several countries. Ancient Peruvian dishes were influenced by Spanish cuisine, with the culinary customs of Africa’s Atlantic coast also making an important contribution. French, Chinese-Cantonese, Italian and Japanese immigrants later contributed to the cuisine’s tastes and smells; four continents in one country.

To get an idea of Peruvian cuisine’s diversity, consider that it boasts over 450 different dishes, over 2,500 types of soup and upwards of 250 traditional desserts.

  6. Aji de gallina (yellow aji pepper and chicken stew)

The first international Mistura Festival Lima was held in 2008. This annual food fair is organized by the Peruvian Gastronomy Society (APEGA), a non-profit civil association founded by chef Gaston Acurio.

The international World Travel Awards (WTA) recently distinguished Peru as the “World’s Top Culinary Destination” and “Top Tourism Site”. For the Peruvian Gastronomy Society, the country’s cuisine earned this recognition thanks to the combination of the generations who have maintained the country’s culinary traditions and customs throughout the years, always with a common goal: to put quality Peruvian products on the table.
